Pillsbury has made some great gluten free products over the last few years. I especially enjoy how easy it is to make their tasty gluten free chocolate chip cookies. Recently Pillsbury started offering two new gluten free “Funfetti” options – cake mix and cookie mix! If you grew up eating Pillsbury cake, you probably had the Funfetti cake mix which contains colorful bits of candy.
In celebration of a recent birthday, we made the Pillsbury Funfetti Gluten Free Cake and Cupcake Mix.
Pillsbury Funfetti Gluten Free Cake & Cupcake Mix Ingredients & Directions:
1 1/4 cups water
1/3 cup oil
4 egg whites
1. Set oven to 350 degrees Fahrenheit. Coat bottom of pan with no-stick cooking spray or shortening and a flour dusting.
2. Combine cake mix, water, oil and eggs in large bowl, mix until moistened. Beat with mixer on low speed for 1 minute and then increase speed to medium for 2 minutes. Pour batter into pans.
3. Bake at 350 degrees Fahrenheit. Bake for 29 to 33 minutes in two 9-inch pans. When toothpick inserted in the center comes out clean, cake is done. Cool 10 to 15 minutes before removing from pan. Cool cake completely before frosting. Store loosely covered.
The Funfetti cake turned out very well. It tasted just like the cake mix I remembered as a kid! It was very moist and the little pieces of candy in the cake make it even more fun to eat!
The Funfetti gluten free cake mix is relatively inexpensive at only $2.98 at my local Walmart. This would be a great choice if you had to bring something to a barbeque or dinner party. No one would even realize they were eating gluten free cake. I’m excited to try the Funfetti Cookie Mix next!
