As you all know, I just returned from a 2 week vacation to the beach with family and friends. Being the only gluten free member of the family, I have gotten used to watching my family enjoy hamburger buns, croissants, donuts, birthday cake, pies, and much more while I’m around. Since it was vacation, there were even more of these type goodies being made and bought! Thankfully, my mom surprised me with a special gluten free treat of my own – gluten free oatmeal cookies. I have never even liked oatmeal cookies, and yet these were superb. Since the recipe made a large amount of cookies, the whole family was able to enjoy the gluten free goodness!
Here is the bag of Trader Joe’s Rolled Oats that we used for the recipe. The bag is fairly large – 32 oz – and is sold for $3.99 at Trader Joe’s. They are not only gluten free, but also dairy free. Please excuse the photos; they were all taken with my phone.
The exact recipe can be found on the back of the package, but I’ve also included it below.
1/4 cup butter
1 1/4 tsp baking soda
3/4 cup sugar
3 cups Trader Joe’s Rolled Oats
3/4 cup brown sugar
6 oz. chocolate chips
1/2 cup sunflower seeds or chopped walnuts
1 tsp vanilla
1 cup peanut butter
Preheat oven to 350 degrees F. In a large bowl, combine sugar, brown sugar and butter and beat until creamy. Add eggs, vanilla and baking soda and mix well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts. Place teaspoon full of dough on a lightly greased cookie sheet about 2 inches apart. Bake 10-12 minutes until lightly brown around edges.
This makes approximately 48 cookies depending on the thickness.
